Cucumber & Millet Salad  

 1 1/2 cups diced cucumber
1/2 cup diced onion (purple is better for nutritional value)
1 medium carrot, diced
2 cups cooked Millet
1/2 cup diced zucchini
1 cup diced tomato (preferably heirloom, if you can source! Sooo yummy)
1 Tbs. olive oil (optional, you can leave it out if you prefer)
1/2 Tbs. curry powder (or a bit less, if it’s too spicy for you)
Sea salt, to taste


Instructions:
Toss all of the ingredients in a bowl. Season with the salt to taste. Voila, that’s it!
I mixed curry and millet and put the rest of raw ingridients on the top. Its light, delicious and cucumber is hydrating your skin during hot days. Hope you'll like it!

Cucumber Salad with an Asian Twist - Get The Glow!

Hi Guys!
Today I want to share with you my next recipe for glowing skin this summer! It's full of vitamins and minerals and so refreshing in this heat. Hope you like it!

Cucumber Salad with an Asian Twist 

Serves 2-3
6 cups sliced* organic cucumbers (I like to keep the skin on for organic for more beautifying and skin/hair-enhancing silica) 
1 cup sliced purple cabbage (lots of vitamin C for a summer glow!)
1 medium carrot, sliced
2 Tbs. raw apple cider vinegar
1 Tbs. tamari
1 Tbs. coconut nectar (or maple syrup if you cannot find)
1/2 tsp. sesame oil
4 Tbs. Sesame seeds
3 Tbs. dill, chopped
1/4 tsp. high quality sea salt (I prefer Pink Himalayan Salt)
* I prefer the cucumbers thinly sliced to soak up more of the dressing, but the width per slice is up to you. 
Throw the cucumbers, carrot and cabbage in a mixing bowl and set to the side. Whisk together the other ingredients, the toss into the veggies. Cover and store in the fridge for 1-2 hours before serving. Enjoy!

Turlu Turlu Turkish Vegetable Casserole




What is the better way of eating in these hot days than veggies with some beautifying spices? Instead of a brown rice or quinoa you can add chopped sweet potatoes right into your casserole.



Serves: 3-4
  • 2 courgettes/zucchini, sliced and quartered
  • 1 medium cauliflower, chopped into florets
  • 2 cups tomato, chopped into 1” pieces
  • 1 medium onion, diced
  • 1 cup carrots, sliced into 1/4” pieces (in other words, pretty thinly so they cook about the same rate as the other veggies)
  • 1 red pepper, cubed
  • 1 Tbs. fresh red chili, chopped
  • 1-2 large cloves of garlic, crushed
  • 2 tsp smoked paprika
  • ½ tsp nutmeg
  • ½ tsp turmeric powder
  • 2 tsp. cumin
  • ½ tsp. ground cinnamon
  • Black pepper to taste
  • High quality sea salt, to taste
  • 2 Tbs.coconut oil + enough to grease dish, if necessary
  • ½ cup water
Preheat your oven to 350 degrees (175 °C )
Chop all your veggies and throw them in a bowl. Toss in the spices and coconut oil. Nutmeg adds unusual twist to this dish but if you want, you can skip it. Season the salt and pepper to your taste.
Grease your casserole dish or baking dish if necessary (depending on the material), and add all the veggies into it and spread evenly. Pour the half cup of water over the entire casserole.
Bake for about 1 hour, or a little longer depending on your oven- until the veggies have softened to your liking. Take a little taste and adjust to your seasoning, as necessary.

Enjoy after and/or along with a big raw salad, and perhaps with some quinoa or brown rice. Glowing Green Soup (GGSo) For Your Beauty!

Hi Guys!
Today I'm going to be sharing with you my variation of Kimberly Snyder's Glowing Green Soup (you can find original here: httpv://www.youtube.com/watch?v=-G4sEY6XWbI). I love to use garlic for its spiciness and health benefits, so of course I had to add it. Avocado adds extra creaminess.It's fresh, delicious and so quick to make! I'm sure you'll love it!

Glowing Green Soup (GGSo) 

Serves: 1-2
  • 1 cup unsweetened plain almond milk
  • 3 cups baby spinach
  • 2 cups tomatoes, rough chopped
  • ½ cup zucchini, chopped
  • 3 Tbs. purple onion
  • 1 garlic clove
  • 2 Tbs. nutritional yeast
  • ¼ tsp. sea salt, or to taste
  • 1 Avocado
  • fresh dill, for topping
  • Cayenne pepper, for topping
  • flax seeds, for topping
Blend everything together, retaining some texture. Top with the avocado, cayenne pepper and flax seeds (I'm using ground ones) and enjoy!
