Cucumber
& Millet Salad

1/2 cups diced cucumber
1/2
cup diced onion (purple is better for nutritional value)
1
medium carrot, diced
2
cups cooked Millet
1/2
cup diced zucchini
1
cup diced tomato (preferably heirloom, if you can source! Sooo yummy)
1
Tbs. olive oil (optional, you can leave it out if you prefer)
1/2
Tbs. curry powder (or a bit less, if it’s too spicy for you)
Sea
salt, to taste
Instructions:
Toss
all of the ingredients in a bowl. Season with the salt to taste.
Voila, that’s it!
I
mixed curry and millet and put the rest of raw ingridients on the
top. Its light, delicious and cucumber is hydrating your skin during
hot days. Hope you'll like it!
